Quick & Easy Vanilla Cupcake Recipe
Cupcake Sponge Recipe
We only use quality ingredients at Print Cakes, always free range eggs, real butter (no marge here!) and vanilla extract (not chemical flavouring!). This recipe makes 10 muffin sized cupcakes or 12 smaller fairy cakes.
- 140g Caster Sugar
- 40g Unsalted Butter
- 120g Plain Flour
- 7g Baking Powder
- 120ml Whole Milk
- 1 Large Free Range
- 1 tsp Vanilla Extract
Preheat the oven to 180°C. Using a stand mixer or an electric hand mixer mix the the caster sugar and softened butter. Make sure your butter is softened or you’ll get hard lumps in your batter. You can soften the butter in the microwave. Do it on a low setting for 30 seconds, you don’t want to melt it. The butter and sugar won’t ‘cream’ like in some sponge mixes, your just looking for it to be combined like in the photo below.
Now add in the flour and baking powder. Mix again, it should start to look sandy in texture.
Next mix the milk with the egg and vanilla in a jug, just use a fork. Add half the milk mixture into the dry and mix. Once it has all come together, scrape down the sides with a spatula to make sure you don’t miss any dry bits. Give it another quick mix then add the rest.
Use an ice-cream scoop to divide the mixture between the cases. You’re looking for them to be about 2/3 full. Pop them in the oven for 18 minutes. You can turn the trays half way through to get an even bake as most ovens have a hot spot.
Cool the baked cupcakes on a wire rack.
Tip! Try making a little hole in the middle of the cupcake and adding a dollop of strawberry jam to create a tasty Victoria Sponge cupcake, then ice as below.
Vanilla Buttercream Recipe
- 100g Unsalted Butter
- 200g Icing Sugar
- 1tsp Vanilla Extract
- 1tbsp Whole Milk
Mix the icing sugar and softened butter with a stand mixer or hand mixer. Both work fine, but the hand mixer might make a bit more mess! You can drape a damp tea towel over the bowl to keep the sugary clouds from escaping.
Once the butter and icing sugar are well combined, add the milk and vanilla. Mix again until light and fluffy. The more you mix the lighter it will become.
Add food colouring if you are wanting to colour and mix to incorporate it. Add colour very slowly, it can be quite strong.
Fill a piping bag with a nozzle of your choice, we like a Wilton 1M. Then pipe a nice swirl on top. Decorate with sprinkles or marshmallows
Tip! Try adding two or three different coloured buttercream to your piping bag to create rainbow icing!
